Mama Safa

Mama Safa is half-Syrian and half-Lebanese, a lovely combination for a meal! Everybody loves Lebanese cuisine, of which she learned her meals from her mother. Four years ago, mama Safa fled with her family from Syria and not long after, she got in touch with Mama’s Koelkast. Mama Safa is 1 of the mamas we are very proud of; her story is truly a success story. After gaining experience for two years with Mama’s Koelkast, she has started her own business, and she’s doing super well!

Her combination of hospitability and her professional attitude are her best recipes. Still, besides this, she also makes incredible meals like hummus, baba ganoush, labneh, fattoush and the most delicious falafel you will ever taste. Our Mama’s

Mama Jane

Mama Jane has been involved with Mama’s Koelkast from the very beginning. Her dishes are so much more than just a meal; mama Jane turns them into an experience! Her stories, knowledge of the Surinamese culture and cuisine and her festive appearance are just as important as the food itself.

The first real Mama’s Koelkast was filled with Mama Jane’s meals daily, delicious Surinamese meals for guests who wanted a quick and easy meal at home. You could taste the love of Mama Jane’s cooking in every bite, and she quickly gained a loyal fan club. This fan club continued to grow when Mama’s Koelkast grew as well. From the ever-growing catering orders to the canteen of Rockstart, where the guests created long queues on the days that mama Jane stood in the kitchen.

Mama Jane often takes her daughter to work as a sous-chef, whom Jane lovingly calls Jantje. Jantje knows like no other what Mama Jane’s cooking is all about: mama Jane lives to cook for other people, and it’s her greatest pleasure to share her motherly love in every meal she serves.

It’s always a big Surinamese party with mama Jane around. She loves all her guests and enchants them with her smile and original Surinamese meals.

Mama Jane enjoys live cooking at parties but also really loves giving cooking workshops. A large buffet is not a problem for her, and mama Jane loves making her own products, like her picalilly hot sauce and potato sambal. Classic Surinamese desserts like bojo, and delicious cassava cake, are also in her repertoire!

Our Mamas

Mama Sandra

Mama Sandra is our Dutch mama! But she also likes to cook without borders in mind. Mama Sandra wants to be inspired by different worldly cuisines. She is a master in making quiches, tajines, and oven meals; we can go on and on. You should ask for her if you’re looking for the most delicious cookies; people cannot get enough of her peanut-caramel bars!

But what mama Sandra is genuinely amazing at is preserving. She makes jams with fruit from Betuwe, an area in the Netherlands, and also spicy pineapple-ginger-chilli jam, which is very good in combination with a cheese platter. She’s also incredibly good at preserving chutneys. She works together with a tomato grower in her place of living in Westland, and some of the most delicious products are created there. Think of ketchup without sugar, relish made out of tomatoes, and so much tomato soup. Soon to be found in Mama’s shop.

Mama Eurice

Mama Eurice is from Mozambique but left for Portugal for her cook and pastry chef education at a young age. Because of this, Mama Eurice’s cuisine is an amazing combination of African and Portuguese cuisine; besides this, she is our favourite baking mama! Mama’s Koelkast is lucky that she ended up living here with her Dutch husband.

Mama Eurice is very creative, which is something you can see in her pastries and dishes and in her crafts, which are actual art pieces. Beautiful bags, key chains and face masks made out of African fabrics as an ode to her motherland. She likes to experiment during baking by changing ingredients for different dietary wishes. Because of this, Mama Eurice makes the most delicious vegan cake, gluten-free pies and lactose-free bonbons.

Mama Eurice has her own bakery in Mama’s Koelkast to create her little delights. Besides this, she also cooks all sorts of meals with South-African and Portuguese influences. Her bobotie is the best you will ever taste! Mama Eurice’s snacks are also very popular; for example, she makes badjias, spicy balls made of chicken peas. Her favourite version of pan de queijo is filled with cheese, broccoli and cashews. It’s always an absolute banquet with Mama Eurice!

Mama Aaliyah

Mama Aaliyah is the founder and owner of Mama’s Koelkast. The lovely story of how Mama’s Koelkast started can be found here. When you book catering with us, you will also see mama Aaliyah support the mamas in the kitchen.

With almost ten years of experience in catering and training mamas, she is a well of inspiration, practical experience and knowledge. As the creative and driving force, she guides the mamas with everything that comes with setting up their own company and developing independence and empowerment. Mama Aaliyah likes to share her experiences and ideas during panel meetings and speaks about her successful concept with love and pride.
